My husband and I are celebrating our first anniversary this weekend. And I recently got to thinking. . .how long can you actually call yourselves newlyweds? It is interesting how you hear a mix of comments from different people about the first year of being married. On the one hand, people say “Oh yes, I hear the first year of marriage is the hardest.” Then on the other hand people say, “Oh, you are still in that honeymoon phase. . . just wait.” At any rate, maybe we are at the end of our technical “newlywed” run, but I really do feel like our wedding was just a few days ago.
I still get a little teary when I look at our wedding pictures. Here is a link to some of the photos in case you are interested. Our photographers were just like. . out of this world amazing. Ahhh ok. . . .enough cheesiness. In all seriousness, one of the great things about being married is that you get to share things with your partner. Or in my case, by “share” I mean force my partner to try food that I make 🙂
In honor of our passage from newlyweds to old married couple, I baked some bread. You may be thinking. . how boring. But no, this is not just any bread. Zucchini bread is one of my husband’s favorite treats. (In general, he likes to eat on the healthier side. He actually LIKES celery sticks. Unbelievable). This is Golden Zucchini Bread from The Newlywed Cookbook. The recipe can be found here on the author, Sarah Copeland’s, blog. If you have yet to look through this book, I assure you, you probably will not be able to walk out of the bookstore without purchasing it. In addition to all of these fantastically fresh and seasonal recipes, there is a ton of practical advice.
I followed the recipe from the book aside from one small change. I omitted the walnuts and because I couldn’t help myself, I shaved a little dark chocolate into the batter. Whoops. . .don’t you just hate it when chocolate finds its way into things?
If you are on the borderline about zucchini bread, this will convert you. It is just sweet enough to feel indulgent, but not over the top. And it also has some things in it that are good for you too, which is always a plus. I also thought this would be particularly timely given the boatloads of delicious zucchini that we are hopefully getting ready to see in the stores and farmers markets. And I would also suggest that you check out The Newlywed Cookbook, because regardless of whether you are a newlywed, the recipes are quite amazing.
