Saturday morning I stopped by the Peachtree Road Farmer’s Market to see what goodies I might discover. It was pretty overcast and the air was heavy with impending rain, so I rushed over quickly to try to beat the shower.
There were strawberries ~ one of my favorites.
There were some gorgeous rainbow colored carrots.
Kohlrabi. . .pretty funky, right?
There were fava beans.
And there was purple kale ~ another one of my favorites. When I walked back into the house, my giant bouquet of kale poking out of my bag, my husband took one look and said, well I guess we’re having kale this week. Judging by the excitement level in his voice, I thought to myself – maybe I’ve pushed it a little with this kale thing. I mean, let’s face it, kale isn’t really dude food. I certainly don’t want him to feel like all we are eating is girly, spa food, but at the same time, that is what I crave when we are eating at home. So, I started looking through all of my various recipe clippings (and the piles can grow quite large) and my pinterest boards, of course, all the while thinking, how can we make this kale a little more sexy?
Enter this Kale and Farro Salad with Feta that I spotted in this month’s issue of Martha Stewart Living. I love farro ~ it has just a little bit of a bite and gives this salad some body. When the farro and kale are allowed to sit in a bath of spicy red onion, lemon, tangy feta, fresh mint and smooth olive oil ~ the kale is taken out of the boring category and into something a little more fancy and satisfying. All alone, this salad is the perfect lunch or alternatively, as we had it, a fabulous base for some seared salmon. And best of all, it got my husband’s stamp of approval. So who knows, maybe kale can be dude food?
He gets full credit for the searing, by the way. I’m still overcoming my fear of super super hot pans. And I must say, he did quite well.
Definitely think about giving this salad a try. . .because as it turns out, kale and dudes can coexist peacefully 🙂
