Five Passover Breakfast Ideas (with Gluten-Free and Vegan options)

I hope you all had a great weekend!  It is a little rainy here today. . . .as my husband likes to put it, not a great picture day.  As many of you know, Passover starts tonight.  For me, the hardest meal to cut flour out of is breakfast.  I am a cereal connoisseur.  I’ve tried the Passover cereals ~ not good. I’m not the hugest fan of eating eggs first thing in the morning. I can’t really get excited about fruit on its own. The options are pretty limited for a cereal-lover like me. So, I’m going to try to branch out this week. If you are addicted to your Kashi or oatmeal too, check out these links. Even if you don’t celebrate Passover, these breakfast ideas may help you get out of your breakfast “rut”, especially if you need some gluten-free and/or vegan options.

~ 1. Make A Smoothie.

~ 2. Have Some Eggs.

I definitely want to try these Kale and Goat Cheese Frittata Cups via The Kitchn (how awesome do these look?  And SO easy too.  You could whip up a batch of these tomorrow and snack on them all week.  And the variations are endless.)

Or you could go super simple, and prep some hard-boiled eggs this afternoon to have on hand this week.

~ 3. Matzo For Breakfast If You Aren’t Maxed Out On It.

Matzo Brei is an egg and matzo scramble that many people eat during Passover. Check out this Classic Savory Matzo Brei via Food52 and a sweeter version with Bananas and Pecans via The Kitchn.

Pair some yogurt with Matzo Granola from Martha Stewart via Eating Bird Food.

You could go the super simple route and have matzo with peanut, almond or sunflower nut butter.

~ 4. Experiment with Quinoa for Breakfast.
