Soon the weather will be warming up and we’ll all want to venture out a little bit more. Warmer weather is always an excuse to throw an impromptu get together. If you find yourself in need of a super easy quasi-homemade appetizer, these tarts from Sweet Paul are just the thing. You need only a few ingredients (actually you could use whatever veggies sound good to you). Using pre-made puff pastry dough requires little clean-up, which is always good when you are planning a party.
If you haven’t checked out Sweet Paul, you definitely should. Paul has a spectacular eye for crafts and recipes and the magazine is a great source of inspiration for entertaining, crafts, decor, cooking and all things domestic. Both recipes start with store bought puff pastry dough. When you are ready to use it, just take it out of the refrigerator and cut the horizontal strip of dough into three or four sections depending on how wide you want your tarts to be. Unroll the dough and let it sit for just a few minutes. Be careful not to let it sit out too long because it softens up really quickly and then gets hard to work with. Using a little bit of flour and a rolling pin, roll out the dough to your desired size ~ about twice the size that you start with. If you want a dramatic “crust” like effect, you can fold over the ends and the edges of the puff pastry, as I did a little bit.
The first recipe is for a Caprese Tart, with fresh mozzarella, cherry tomatoes and basil. I found some colorful cherry tomatoes and also used smaller balls of mozzarella, which worked well. Drizzle with a little bit of olive oil, salt and pepper, garnish with basil and you are done!
The second recipe is a Mushroom Tart with sage and asiago cheese. I grated some parmesan cheese over the top of the mushrooms before baking instead of asiago, mainly because I had it on hand and we like parmesan. I think it turned out quite well!
Both were so easy and can be served hot or cold, which is ideal when you want to go mingle with your peeps.
