Looking for something easy to toss into your crockpot and forget about? This dinner is so low maintenance and yet so flavorful and good for you ~ it kind of seems too good to be true. I tried it on a whim just looking for something new and it was a hit. When I heard lots of mmmmms, I knew it turned out pretty good 🙂
You can definitely vary the vegetables based on what you like ~ I happened to love mushrooms and green beans. When possible, I buy the “low sodium” options for the canned tomatoes and tomato paste ~ that way you can control the salt level yourself. We had it over pasta, but I’m sure it would be great over quinoa or another type of grain.
Easy Crockpot Italian Chicken and Vegetables (slightly adapted from Better Home and Gardens New Cookbook)
What You’ll Need:
8 ounces of frozen green beans
1 cup fresh mushrooms, quartered
1.5 lbs chicken breast cut into 1-inch pieces
1 14.5 ounce can Italian-style stewed tomatoes, undrained
1 6 ounce can Italian-style tomato paste
1 teaspoon dried Italian seasoning
2 cloves garlic minced
1 cup low sodium chicken stock
Salt and pepper to taste
Angel hair pasta or whatever you prefer for serving
What You’ll Do:
Stir together green beans and mushrooms and place in crockpot. Place chicken over vegetables. In a small bowl, combine undrained tomatoes, tomato paste, Italian seasoning and garlic. Pour over chicken in slow cooker. Add chicken stock. Cover and cook on low for 4-5 hours or until chicken is cooked through and vegetables are tender. If you notice that the liquid level is getting low, add a little more chicken stock. Add salt and pepper to taste. Serve over pasta. If desired, garnish with a little fresh basil and Parmesan cheese.
