Sometimes you just want something super easy and healthy, that requires little-to-no thought. This is one of those meals. Not only is it really tasty, but it takes very little time to throw together. When you say “slow cooker”, people may assume that you need to let a recipe cook all day. But the slow cooker is useful for many recipes that have shorter cooking times ~ this being one of them.
This is my version of a chicken and rice bowl that you will see on the menu of many restaurants these days. The upside of making it at home is that you can control the salt and sweetness level, which is always a plus. The chicken simmers in this delicious sauce that is perfect for spooning over rice and vegetables. You could use any combination of vegetables that you have on hand. And I’m sure it would be great over noodles as well. We have a rice cooker, which I love. And we are pretty partial to broccoli and spinach.
My recipe is a combination of this recipe for chicken teriyaki and this recipe for honey-sauced chicken. While I enjoyed both of these, I wanted to create a recipe that is not as sweet, but is still reminiscent of the Asian flavors that you typically find in a chicken and rice bowl.
Easy Slow Cooker Chicken and Rice Bowl
What You’ll Need for the Slow Cooker Chicken:
1 lb of boneless, skinless chicken breasts
1/4 cup honey
1/4 cup low sodium soy sauce
1 cup low sodium chicken broth
1/4 cup ketchup
1 tbsp vegetable oil
1/4 cup water
1/4 cup onion, chopped
2 cloves of garlic, minced
pepper to taste
What You’ll Do:
Combine all ingredients in a small bowl except for the chicken and pepper. Pepper chicken and place in the bottom of your slow cooker. Cover chicken with mixture. Cook for 1.5 hours on high or 3 hours on low. Take the chicken out of the mixture and shred into bite-sized pieces using two forks. Place chicken back in the slow cooker and stir to combine with sauce. Serve over roasted broccoli or your other favorite vegetable and brown rice.
