One of my favorite things about summer camp was sitting around the fire and making s’mores. I never really mastered the art of “toasting” the marshmallow. I would usually let it catch on fire for a few seconds and then blow it out. Oh well, camping was never really my strong suit. Despite my tendency to burn the marshmallow to a crisp and my wariness of the outdoors, I always loved the combination of graham cracker, melted chocolate and marshmallow.
If you are tired of pumpkin desserts but craving something seasonally sweet, these s’mores cookie bars are just the treat for you.
I will forewarn you that this process is quite messy, but it is really fun. Definitely something that kids would enjoy. Even though there is no fire, there is still ooey, gooey, marshmallowness. Oh and also the potential to take some aggression out on some graham crackers.
I followed this recipe from All You on myrecipes.com. I did substitute granulated sugar for 1 cup of the light brown sugar, but that was the only change. I would also note that I looked to this recipe from Sally’s Baking Addiction for guidance and inspiration, as it is similar to the one that I actually used. Having tried Sally’s recipes before, I am confident that her recipe would turn out fabulously as well.
Go ahead and make these s’mores bars…I promise you won’t regret it.
